Pulled Chicken with Salad (Green Day)
Head some olive oil in a large pot with the garlic, chili flakes, and the Szechuan peppercorns. After maybe 1-2 minutes add the chicken, diced roma tomas. Add now a good amount of cherry cooking wine and balsamic vinegar. Put in the ground black pepper, bay leaves, and peanuts. Add some water until the chicken is covered. Bring up to boiling, then reduce heat and cover. Cook for about 1 1/2 - 2 hours. Add some water sometimes, so that it doesn't burn. Ad the end open the lid and continue boiling until most of the liquid is gone. Remove from heat and pull (shred) the chicken with two forks. After you plated the meet you can decorate it with some chopped green onions.
In a bowl combine olive oil, apple cider vinegar, dill, and ground black pepper. Add the cut orange cherry tomatoes, diced European cucumber, and diced hard boiled eggs. Mix it all carefully.
